If a neck is bowed, then playing at the bowed area in the neck is always more difficult. The reason is that the strings are higher off the neck at the area of the bow. A player has to remember to slightly change his/her technique when playing around that spot. Rather than have to deal with that we make sure the neck is parallel to the strings and all action up and down the neck is the same. In that way, a player only has to think about the music and not how hard to push down the strings in certain problem spots.
